Here are some recommendations: The sausage piece must be in a cool and dry place, where the temperature is approximately 15ºC and the relative humidity of the environment is 75% more or less. The place where the sausage pieces are hung, without touching each other, must be dark and protected against insects (pantry, cellar...), it must be avoided to hang it outdoors. To fully appreciate its flavour, it is advisable to consume it at room temperature. If the pieces to hang are already started, the area of the cut must be facing the ground and well covered so that it is not in contact with the air. It is advisable to spread a little olive oil on the cutting area so that the sausage does not become rancid and cover it with a little transparent film paper.
